Jake, I've been fighting this for awhile. I removed listing the "protected by" attribute from labels awhile ago. In my experience, few people use the information and of those that do they always assume it to be the upstream source of power / LOTO point. In a mis coordinated system, it is not. SKM has an attribute for populating the upstream source of power, however, it can only be used when printing panel schedules. They have not allowed the attribute to be used on labels.
If its a requirement you could use the protected by attribute, title it "Fed From" or "Source of Power" and produce most labels. Manually find any that are not coordinated and hard code the field to say what you know it should. This is definitely not a great solution but if you're not doing it often it may give you what you're after.
I see your point but I don't necessarily agree in general but what you say CAN be an issue, just not that often in my experience. I DO like having the "protected by" (or edited to "Fed From" like in my example above) field on the label. You are correct that it may not be the device immediately upstream that populates that field IF you check the box for miscoordination in the arc flash setup. I almost never use that function as I have already checked coordination and it has to be pretty gross miscoordination for that to override that device immediately upstream. It DOES need to be considered sometimes though.
For the purposes of answering the OP, it doesn't look like it really matters. As happens so many times on here, people pop in, ask a question and we regulars spend time trying to help them only for the OP seagulls to have disappeared never to be heard from again.
